Kenyan Minced Beef Stew (Mince / Mishikaki Style)
If you grew up in a Kenyan home like mine, you know minced beef stew is that quick-saving, flavor-packed dish you can whip up on busy evenings. My mum always called it “nyama ya kuokoa siku”—the kind of meal that rescues the day when you want something tasty but don’t have the energy for complicated cooking.
This Kenyan Minced Beef Stew (Mishikaki Style) is rich, thick, and perfectly spiced—great with ugali, rice, chapati, or even mukimo. It cooks fast, absorbs spices beautifully, and brings out that classic Kenyan taste we all love.
Ingredients
- 500g minced beef
- 2 tbsp cooking oil
- 1 large onion, finely chopped
- 2–3 cloves garlic, crushed
- 1-inch ginger, grated
- 2 tomatoes, blended or finely chopped
- 1 tbsp tomato paste
- 1 tbsp royco or beef masala (optional)
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp cumin
- ½ tsp turmeric
- 1 green capsicum (hoho), diced
- 1 carrot, grated (optional)
- Fresh coriander (dhania), chopped
- Salt to taste
- ½ cup water (as needed)
Instructions
Step 1: Brown the minced beef
Heat oil in a sufuria, add the minced beef, and fry on medium heat until browned and separated. Let it cook until most liquid evaporates for a deeper flavor.
Step 2: Add onions, garlic, and ginger
Add the chopped onions and fry until soft and golden. Add garlic and ginger, mix well, and cook for another minute.
Step 3: Add spices
Sprinkle in paprika, black pepper, cumin, turmeric, and beef masala (optional). Stir to coat the mince with all the spices.
Step 4: Add tomatoes
Add chopped or blended tomatoes and tomato paste. Cook until the mixture thickens and the tomatoes lose their raw taste.
Step 5: Add vegetables
Add diced hoho and grated carrot. Mix and cook for 3–4 minutes until softened.
Step 6: Add water and simmer
Pour in about ½ cup of water (adjust as needed). Cover and simmer for 5–8 minutes until thick and flavorful.
Step 7: Finish with dhania
Add chopped coriander, mix well, and turn off the heat. The aroma alone is enough to call everyone to the kitchen.

Jikoni Secrets Tip
For a true mishikaki-style flavor, fry the mince longer until slightly caramelized before adding tomatoes. That browning makes all the difference!
