Ingredients for Matumbo Fry

  • 1 kg matumbo (cleaned)
  • 2 medium onions (chopped)
  • 3 ripe tomatoes (chopped)
  • 3 tablespoons cooking oil
  • 1 teaspoon garlic (optional)
  • 1 teaspoon ginger (optional)
  • Salt to taste
  • Optional spices: black pepper, curry powder

How to Cook Matumbo Fry Kenyan Style

Step 1: Clean and Boil the Matumbo

Wash the matumbo thoroughly with clean water. Place them in a sufuria, add water, and boil until very soft. This can take 1 to 2 hours depending on the matumbo.

Tip: Do not add salt at this stage — it helps the matumbo soften faster.

Step 2: Prepare the Frying Base

Heat oil in another sufuria, add onions, and cook until soft and lightly browned. Add garlic and ginger if using, then stir in tomatoes.

Step 3: Add the Matumbo

Cut the boiled matumbo into small pieces and add them to the tomato mixture. Stir well so that every piece is coated with flavour.

Step 4: Season and Fry

Add salt and spices to taste. Let the matumbo fry on medium heat, stirring occasionally, until the liquid reduces and the matumbo is nicely fried.
