Kenyan Beef Fry Recipe – How to Make Kenyan Dry Fry
Growing up in Kenya, nothing reminds me of family gatherings like a hot plate of beef dry fry served with ugali. This dish is simple, quick, and incredibly flavorful — the kind of recipe that every home has mastered in its own unique way. In many Kenyan homes, beef fry is a Sunday classic, a special-occasion meal, and the ultimate comfort food.
Today, I’ll show you how to make an authentic Kenyan Beef Dry Fry, step-by-step. The beauty of this recipe is its simplicity — no complicated ingredients, no fancy techniques, just pure Kenyan flavor.
Ingredients
- 500g beef (cubed)
- 1 large onion, chopped
- 2 tomatoes, diced
- 1 tbsp ginger-garlic paste
- 1 green capsicum (hoho), chopped
- Fresh dhania (coriander)
- 1 tsp paprika
- Salt to taste
- Oil for frying
- Optional: beef cubes, chili
How to Make Kenyan Beef Fry
Step 1: Boil the Beef
Place the beef in a sufuria, add ginger-garlic paste, salt, and a little water. Let it simmer until the meat becomes tender. This allows the beef to develop deep flavor and soften perfectly.
Step 2: Fry the Onions
Heat a pan with oil, add onions, and fry until golden brown. This caramelization adds richness to the final dish.
Step 3: Add the Beef
Add the boiled beef to the onions and fry on medium-high heat. Let the meat brown nicely — this is where the “dry fry” magic happens.
Step 4: Add Tomatoes & Hoho
Add tomatoes, capsicum, and paprika. Mix well and let the tomatoes cook down into a thick, flavorful coating for the beef.
Step 5: Dry Fry Properly
Allow the beef to cook uncovered so the sauce evaporates. Stir occasionally to prevent sticking. You’re aiming for a rich, dry, slightly oily finish.
Step 6: Add Dhania
Sprinkle fresh coriander at the end for aroma and color.
Best Served With:
- Ugali (see recipe here: How to cook ugali)
- Chapati
- Rice
- Kachumbari
