Biryani ya Kuku Recipe | Authentic Swahili Chicken Biryani Step-by-Step

Biryani ya Kuku (Swahili Chicken Biryani)

One of the most requested recipes in my inbox is the Biryani ya Kuku Recipe. Biryani ya Kuku is one of the most treasured dishes along the Kenyan Coast — a rich, fragrant, and celebratory rice dish layered with spiced chicken, potatoes, and deep Swahili flavors. Whether it’s a wedding, Eid celebration, or a special family gathering, biryani never misses on the table.

Unlike pilau, which cooks everything together, Swahili biryani is made using the “layering method,” where rice and chicken stew are cooked separately, then layered to create irresistible aroma and flavor.

Ingredients for Biryani ya Kuku

  • 1 kg chicken pieces
  • 3 cups basmati rice
  • 4–5 potatoes, peeled and halved
  • 3 tomatoes, blended
  • 2 large onions, sliced
  • 1 cup plain yogurt
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp black pepper
  • 1 tbsp biryani masala (Swahili blend)
  • 1 tbsp tomato paste
  • Fresh coriander
  • Saffron or food color mixed with warm water
  • Cooking oil
  • Salt to taste

How to Prepare Biryani ya Kuku

1. Marinate the Chicken

In a bowl, mix yogurt, garlic, ginger, turmeric, cumin, coriander, black pepper, and biryani masala. Add the chicken pieces and coat well. Cover and refrigerate for at least one hour to allow the flavors to soak in.

2. Fry the Potatoes

Heat oil and fry the potato halves until golden. Remove and set aside.

3. Cook the Chicken Stew

In a large sufuria, fry onions until caramel brown (important for biryani flavor). Add the marinated chicken and cook for several minutes. Add blended tomatoes and tomato paste, then simmer until the chicken is tender. Add the fried potatoes and let the stew thicken.

4. Prepare the Rice

Rinse basmati rice and parboil it with whole spices (optional: cloves, cinnamon, cardamom). When the rice is halfway cooked, drain the water.

5. Layering the Biryani

In a large pot, add a layer of rice, followed by chicken stew. Repeat the layers, finishing with rice on top. Sprinkle food color or saffron water, drizzle some oil, cover tightly, and steam on low heat for 20 minutes.

6. Serve

Fluff gently and serve hot with kachumbari, ukwaju sauce, or a simple fresh salad.

Why People Love Biryani ya Kuku

This dish is loved because of its rich aroma, beautiful presentation, and delicate balance of spices. It’s perfect for family gatherings, guests, or special holidays. Biryani is more than food — it’s an experience.
